Our I&J sashimi grade scallops (Patinopecten yessoensis) are a premium product, with the raw material sourced from Hokkaido, Japan. They’re grown in cold waters, ensuring a sweet taste with a succulent texture – making them ideal for all premium menus.
Our Top Sail and Neptune roe on & roe off scallops are sea farmed and harvested through netting on the ocean floor. Then they’re carefully processed by hand,ensuring the finest flavour, texture and quality. Their season is limited from March to June, however by working closely with our suppliers we’re able to ensure a consistent supply all year round.
